Flounder Fish: Fried

I grew up on the east coast and had a father that regularly took all of his children fishing, crabbing and clam digging. Flounder remains my favorite fish to this day. I have many flounder recipes but the one below is the is the easiest and quickest…give it a try! Large heavy skillet 2 shallow medium dishes 6-8 flounder fillets 2 eggs 1 1/2 Tbs prepared yellow mustard 1/2 tsp salt pepper to taste 1/2tsp garlic powder 1/2 cup vegetable oil 1 3/4 cups instant mashed potato flakes 1/2 cup oil or shortening Directions: Place potato flakes in one shallow dish. Beat eggs in the other and add mustard, salt, garlic powder. shallow dish. Heat oil or shortening in skillet over medium-high heat. Dip fish fillets in the egg mix. Dredge the fillets in the potato flakes…completely coat. If you enjoy extra crispy, dip into egg and potato flakes again. Fry fish for 3 to 4 minutes on each side, or until golden brown. Remove and drain on paper towels. Serve with your favorite side dish and enjoy! Tip: Cornbread or hush-puppies go very well with fried flounder.
