Thomas Keller of The French Laundry joins Top Chef tonight. Thomas Keller owns French Laundry and Ad Hoc both in Yountville, north of San Francisco.

Ad Hoc at Home is the new book out by Keller that is based upon the menu at the eatery which opened in 2006. Ad Hoc meal prices run $50 per person, French Laundry $240 for dinner tasting menu reports Reuters.

Keller says about pricing in this economy:

“I’m not trying to make a statement about where we are at this point in the economic world right now. I’m a fine dining chef. There is room for every kind of dining in America. It’s all based on what your need is.”

The Robb Report details this month the seasonal menu changes under Timothy Hollingsworth who “took over the helm at The French Laundry (TFL, to insiders) …. In the coming winter months, Hollingsworth is developing his own signature versions of stews, braises, and game-bird preparation, continuing in the TFL tradition.”
