I grew up on the east coast and had a father that regularly took all of his children fishing, crabbing and clam digging.
Flounder remains my favorite fish to this day. I have many
flounder recipes but the one below is the is the easiest and quickestâ¦give it a try! Large heavy skillet 2 shallow medium dishes 6-8
flounder fillets 2 eggs 1 1/2 Tbs prepared yellow mustard 1/2 tsp salt pepper to taste 1/2tsp garlic powder 1/2 cup vegetable oil 1 3/4 cups instant mashed potato flakes 1/2 cup oil or shortening Directions: Place potato flakes in one shallow dish. Beat eggs in the other and add mustard, salt, garlic powder. shallow dish. Heat oil or shortening in skillet over medium-high heat. Dip fish fillets in the egg mix. Dredge the fillets in the potato flakesâ¦completely coat. If you enjoy extra crispy, dip into egg and potato flakes again. Fry fish for 3 to 4 minutes on each side, or until golden brown. Remove and drain on paper towels. Serve with your favorite side dish and enjoy! Tip: Cornbread or hush-puppies go very well with
fried flounder.
